Water buffalo is not American bison and it is not African Cape buffalo. It has a character and culinary tradition all its own.

The meat is richly flavored without being overpowering and can be used in many familiar recipes. Ground water buffalo works beautifully in burgers, meatballs, tacos, chili, and pasta sauces. Steaks and roasts benefit from attentive cooking and should not be overcooked.
